Planning an Event
Catering is just a part of the picture when it comes to planning your event. The cuisine can be a backdrop, the main event or somewhere in between. On the other side of the table (or back of the house if you will) is the caterer. Our job is to make your event special, the cuisine great and to do it with a smile. There is quite a bit that goes into planning for your event, executing the event and even providing you with a proposal. At times I'm sure you have questions as to the how's and why's that go into catering an event. Here are some of the answers. Number of Appetizers
Believe it or not, there are a lot of factors that go into figuring
out how many appetizers are needed for an event. The time of day;
Morning, Noon, Late Noon, Evening and Late Evening. For example,
if you were having a late evening event you would select less appetizers
per person because more than likely people have already eaten. Now,
if you are having an event that is going to last more than a few
hours, the last theory goes out the window. This is because people
will inevitably get hungry again (and alcohol doesn't help)!
Head Counts

Buffet Service
Buffet service is one of the more popular options of service for
an event. Often times clients decide not to have servers and do
self serve. This can cause quite the problem from, simply put human
nature. Our eyes are always bigger than our stomachs, so we have
a propensity to pick up one of everything even though we probably
won't eat it all. If you pair this with an event in which the menu
was setup for the guests to have one entree you will end up with
a dilemna. The dilemna is you're going to run out of food as the
first people in line are going to grab one of each entree and leave
the people at the end of the line with "no" entree. Servers are
your friend...or double up your entree to allow for each guest to
get one of each.
